Crock-pot Bacon Cheddar Cauliflower Soup

  • 4 cups cauliflower a large head
  • 1 small onion diced
  • 1 teaspoon salt
  • 1 teaspoon pepper ground black pepper
  • 6 cloves garlic minced
  • 3 cups chicken broth
  • 8 oz cream cheese
  • 1/2 cup cheddar cheese shredded
  • 1/2 pound bacon cooked and chopped
  • 2 strips of scallions sliced
Crock-pot Bacon Cheddar Cauliflower Soup

  1. Cut the cauliflower into florets and place it in your crockpot with your onion, salt, pepper, garlic and chicken stock.
  2. Cook on low for 6 hours or high for 4 hours.
  3. Once its done add your cream cheese and cheddar cheese. Using an immersion blender puree the soup until it is smooth and creamy.
