Cheesy Apple Stuffed Chicken Breasts

For the apple chicken breasts:
  • 2 tablespoons olive oil
  • 2 large chicken breasts, boneless and skinless
  • 1 cup sharp white cheddar cheese, thinly sliced
  • 1 red apple, thinly sliced
  • Salt and freshly ground black pepper
For sweet potatoes:
  • 2 medium sweet potatoes, cut into wedges
  • 1 red onion, thinly sliced
  • 1 tablespoon olive oil, plus additional for cooking
  • ½ teaspoon smoked paprika
  • Fresh coriander and mint, to serve
  • Salt and freshly ground black pepper
Cheesy Apple Stuffed Chicken Breasts

Preheat the oven to 400 degrees.
Butterfly each chicken breast horizontally and open like a book. Season with salt and pepper, then on 1 side of the chicken, place 7 to 8 thin apple slices alternating with the same amount of slices of cheese, lightly drizzle with olive oil. Fold the uncovered side over as if you were closing a book, and drizzle a little more olive oil and season well. Repeat until all the chicken breasts are filled.
